Chinese Chicken Noodle Soup

There is no better cure for a cold then chicken noodle soup. This version has a fresh zingy taste from the ginger and green onions. 
We modified it slightly with Japanese soba. Helen normally uses Somen. In any event I think we should rename it Chinese/Japanese soup.

Ingredients1 whole chicken1 2" piece of ginger, peeled and sliced in 1/4" slices1-2 whole green onions cut in half2 handfulls fresh shiitake mushrooms4 Tbs salt1 Tbs soy sauceSomen
DirectionsRinse chicken and remove all innards. Keep the neck for later.Trim extra fat from chicken and place in pot. Add the chicken neck as well.Add green onions, mushrooms and ginger to pot.Fill pot with water until it covers the chicken.Add salt and soy sauce.Bring to a boil then reduce heat to a simmer for one hour. Periodically skim the skum from the top.After 40 minutes taste. Add more seasoning if necessary.Remove pot from heat. Remove chicken and chicken neck from pot.Bring a pot to boil with a dash of salt. Home Depot Leaderboard

How do you know what a winner looks like? Just look at the leaderboard. Using a point structure makes it easy to determine who the top five or ten players are. A point structure also makes it easy for the leaderboard to be updated.

Home Depot has turned a leaderboard on it's side and made it into a game of football. The more points you get for good customer service the further along the field you progress. Anyone can become number one because the goal is for everyone to reach the end zone.
